Pumpkin Pie Recipes Ideas!

Thanksgiving is barely three days away! This is such an exciting time of year - we finally get to see our extended families and our beautiful Lake of the Ozarks' homes are filled with the smells of another delicious Thanksgiving dinner in the making. 

Thanksgiving is also an incredibly busy time of year as we hurry to finish up a week's worth of work in just a few days, go grocery shopping, and plan and cook a magnificent feast. Sometimes, in all the rush, we get so focused planning the meal that we forget to focus on the delicious goodies that await us afterwards - dessert! We did some research and have compiled a list of the most promising pumpkin pie recipes for you to try this holiday season.

Easy Pumpkin Pie
Recipe from TasteOfHome.com

3 eggs
1 cup canned pumpkin
1 cup evaporated milk
1/2 cup sugar
1/4 cup maple syrup
1 tsp. ground cinnamon
1/2 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. maple flavoring
1/2 tsp. vanilla extract
1 9-inch frozen pie crust

Beat eggs, pumpkin, milk, sugar, maple syrup, cinnamon, salt, nutmeg, maple flavoring, and vanilla extract together until blended. Pour into the pie crust. Loosely cover the edges with foil. Bake at 400° for 10 minutes, then lower heat to 350° and bake for approximately 40-45 minutes (until a knife can be inserted into the pie and come back out clean).

Turtle Pumpkin Pie

1/4 cup + 2 Tbsp. caramel ice cream topping (divided)
1 graham cracker crumb crust
1/2 cup + 2 Tbsp. chopped pecans (divided)
2 3.4oz JELL-O Vanilla Flavor Instant Pudding
1 cup milk
1 cup canned pumpkin
1 tsp. cinnamon
1/2 tsp. nutmeg
1 8oz. tub of Cool Whip Whipped Topping (divided)

Pour 1/4 cup of caramel topping onto the pie crust and sprinkle with 1/2 cup of pecans. Beat the pudding, milk, pumpkin, cinnamon, and nutmeg together in a separate bowl until blended, then gently stir in 1 and 1/2 cups of Cool Whip. Use this mixture to fill in the crust. Top with remaining Cool Whip, caramel topping, and nuts before serving.




Pumpkin Coconut Pie

15oz. can pure pumpkin
1 cup coconut milk
3/4 cup sugar
2 large eggs
1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1/4. tsp allspice
Dried, shredded coconut
1 pie crust

(You can use a pre-made graham cracker crust, or the full recipe on FoodNetwork has the instructions to make your own pie crust.)

Mix the pumpkin, coconut milk, sugar, eggs, vanilla extract, cinnamon, and allspice until well-blended. Pour into the pie crust and bake at 325° for 1 hour. Sprinkle shredded coconut around the edges of the pie and bake for another 15 minutes until finished.
